The Canberra Distillery was established by Tim Reardon, an economist who developed a passion for spirits after experimenting with distillation in his backyard. After three years of experimentation and numerous failed attempts, his 47th gin experiment succeeded, prompting him to launch the distillery in Canberra. Unlike many modern distilleries that purchase industrial ethanol and re-distill it, Canberra Distillery remains committed to starting from raw ingredients: water, yeast, and energy sources such as grain, potato, fruit, or sugar. All processing, distilling, and bottling is performed by hand in Canberra. The vodka debuted in December 2015 as part of the distillery's inaugural spirit releases, marking the first commercial distilling operation in Canberra's history. The distillery operates from Mitchell, offering tours and tastings to visitors, embodying the city's emerging craft spirits culture.
Triple-distilled using column stills from raw grain and local water sources. Carbon filtration ensures purity and smoothness. All production stages—mashing, fermentation, distillation, and bottling—are performed by hand in small batches, with no purchased industrial ethanol used.
