Produced at the Sauvage Distillery in Charlotteville, New York, the operation ferments, distills, and bottles entirely under one roof using apples from regional New York farms. Each batch varies seasonally—recent releases have featured Spigold, Jonagold, McIntosh Red, Granny Smith, Gala, Ida Red, Greenings, and Crispin varieties. The distillery sits on property with apple trees over 100 years old that still bear fruit, anchoring the brand's commitment to heritage agriculture. Unlike grain-based competitors, Upstate prioritizes quality over cost efficiency, resulting in a vodka with natural glycerin content and distinctive apple character. The spirit is certified gluten-free and kosher, appealing to consumers seeking transparency in sourcing and production methods.
Small-batch fermentation using 70-80 apples per batch from local New York orchards. Fermented with yeast and water, then distilled in-house to concentrate flavors while maintaining natural glycerin content. Charcoal filtration applied post-distillation. Cut to 40% ABV with local water. All production stages—fermentation, distillation, and bottling—occur at the Sauvage Distillery facility.
