Knocklofty Spirits operates from a home-based micro-distillery at the foothills of Knocklofty in West Hobart, Tasmania, run by three couples committed to handcrafted production. The distillery ferments and distills its base spirit on-site, incorporating local Tasmanian botanicals including pepperberry and wattle seed. The Bartender Series represents the distillery's experimental approach, with each expression developed through collaboration with bartenders and spirits enthusiasts. The yuzu variant combines the clean base spirit with Japanese citrus character. All equipment has been constructed from recycled and second-hand materials, reflecting the producers' sustainability ethos. Batch sizes remain intentionally small at approximately 70 bottles per run, ensuring individual attention to hand-bottling and labeling. The distillery holds Tasmanian Liquor Licence #81488 and operates without reliance on commercial ethanol suppliers, maintaining complete control over fermentation and distillation.
Single distillation of fermented grain base on-site at West Hobart micro-distillery. No carbon filtration applied, relying on the purity of local fermentation and distillation processes. Yuzu infusion added post-distillation. Hand-bottled and labeled in small batches of approximately 70 units per release.
