Distillery No. 209, located on San Francisco's Pier 50, created the world's first certified Kosher-for-Passover vodka in response to strict Jewish dietary laws that prohibit leavened grains and grain-based spirits during Passover. Master distiller Arne Hillesland developed the formula using Passover-certified sugarcane as the base spirit, distilled five times in column stills. The production process is rigorously supervised by rabbis from the Orthodox Union to ensure compliance with kosher dietary requirements. The vodka is filtered through activated charcoal using a proprietary upward-pumping method that prevents channeling, ensuring maximum purity. This achievement followed the distillery's successful 2010 launch of No. 209 Kosher-for-Passover Gin, making Distillery No. 209 the only producer of both certified Kosher-for-Passover vodka and gin globally. The spirit reflects both technical precision and religious dedication to craft.
Five-times column-distilled from Passover-certified sugarcane base spirit. Filtered through activated charcoal using upward-pumping method to prevent spirit channeling. Diluted from 96% ABV to 60% ABV prior to filtration, then back to bottling strength with purified water. Production supervised by Orthodox Union rabbis at Pier 50 facility in San Francisco.
