Underground Spirits was founded in 2017 by Dr. Toby Angstmann, a medical doctor and chemist fascinated by the technical side of distillation. After visiting Scottish distilleries, Angstmann recognized that Canberra possessed all the necessary elements for quality spirit production: clean water, a pristine environment, and excellent regional producers. The venture began as a passion project with the founding team maintaining full-time jobs while hand-pouring, capping, sealing, and labeling each bottle. Underground Spirits has since grown into one of Australia's leading craft distilleries, earning recognition for innovation and quality.
