Starka's origins trace back to 15th-century Poland and Lithuania, where a father would fill an oak barrel with vodka upon his daughter's birth, seal it with beeswax, and bury it in sandy soil. On her wedding day, the barrel would be unearthed to reveal a transformed elixir—the name itself derives from the Polish word for 'old woman,' reflecting the aging process. By the 17th century, Starka had become a favourite of Polish-Lithuanian nobility and Sarmatist culture. The tradition mirrors whisky-making methods: natural rye spirit (up to two distillations, no rectification) ages in oak previously used for wine, acquiring colour and character from wood interaction rather than additives. Polmos Szczecin remains the sole authorized Polish producer, maintaining strict production standards and aging periods ranging from 10 to over 50 years, making Starka a uniquely Polish expression of aged spirits.
Made from natural rye spirit with up to two distillations and no rectification, aged in oak barrels (previously used for wine) with small additions of apple and linden-tree leaves. Colour develops naturally from spirit-oak interaction over 10–50 years. Production methods mirror traditional rye whisky techniques, with no artificial additives or colouring.
